Apple Pie


Ingredients
         2 prepared 8 inch pastry shells
         6 tart apples - peeled, cored and sliced
         1/2 cup white sugar
         2 teaspoons ground cinnamon
         2 tablespoons all-purpose flour
         3 tablespoons butter

Directions
Preheat oven to 350 degrees F (175 degrees C).
Place sliced apples in a large bowl. In a small bowl combine sugar, cinnamon, and flour. Stir well and pour mixture over apples. Cut half of butter or margarine into small pieces and add to apples. Toss apples until thoroughly coated.
Pour apples into pastry-lined pie pan. Dot apples with the rest of butter or margarine. Place second pastry on top. Seal edges and cut steam vents in top crust.
Bake in preheated oven for 45 to 55 minutes, until crust is golden brown.

Sweet Bread

2        cups warm water
2/3     cup white sugar
1 1/2  tablespoons active dry yeast
1 1/2  teaspoons salt
1/4     cup vegetable oil
6        cups bread flour

Directions:

1. In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.

2. Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.

3. Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.

4. Bake at 350 for 30 minutes.

Hearty Meal



Cheesy Stuffed Shells

1 (16 ounce) package jumbo pasta shells
4 cups large curd cottage cheese
12 ounces mozzarella cheese, shredded
1/2 cup grated Parmesan cheese
2 eggs, lightly beaten
1 pinch garlic powder
1 teaspoon dried oregano
1 teaspoon dried parsley
1 (26 ounce) jar spaghetti sauce
1/4 cup grated Parmesan cheese

Directions:

1. Cook shells according to package directions.

2. Mix together cottage cheese, mozzarella cheese, 1/2 cup Parmesan cheese, eggs, and garlic powder. Rub the dried herbs in the palms of your hands to pulverize them, and stir into the cheese mixture. Stuff mixture into the shells. (Use a ziplock bag with one of the ends cut off to stuff the shells faster.)

3. Spread 1/3 of spaghetti sauce in the bottom of a 15 x 10 inch pan. Place shells open side up, and close together in pan. Spread remaining sauce over top, and sprinkle with remaining 1/4 cup Parmesan cheese.

4. Bake at 350 for 25 to 35 minutes, or until bubbly.

Vegetable Pasta Alfredo

Ingredients


4 cups penne pasta, uncooked
2 tablespoons KRAFT Calorie-Wise Zesty Italian Dressing
675 grams boneless skinless chicken breasts, cut into 1-inch chunks
2 zucchini, cut into chunks
1 1/2 cups cut fresh asparagus (1 inch pieces)
1 red pepper, chopped
1 cup 25%-less-sodium chicken broth
1/2 cup PHILADELPHIA Light Cream Cheese Spread
1/4 cup KRAFT 100% Light Parmesan Grated Cheese
Directions


Cook pasta as directed on package.
Meanwhile, heat dressing in large skillet on medium heat. Add chicken and vegetables; cook 10 to 12 min. or until chicken is cooked through, stirring frequently. Add broth and cream cheese spread; cook 2 min. or until cream cheese is melted, stirring constantly. Add Parmesan cheese; mix well.
Drain pasta; return to pot. Add chicken and vegetable mixture; toss lightly. Cook 1 min. or until heated through. (Sauce will thicken upon standing.)

Sliced Red Potatoes

Grandma Thomas Lasagna

2       pounds lean beef
1/4    pound sausage (mild italian)
1/2    teaspoon salt
1       teaspoon pepper
1 1/2 teaspoons oregano
1 1/2 teaspoons Worcestershire Sauce
2       cans Cream of Mushroom Soup
1 1/2 cups milk
1       package chopped spinach
1       package lasagna noodles
1       package mozzarella cheese
8       ounce can tomato sauce
Sprinkle Parmesan Cheese

Brown meat. Add seasonings, soup, milk and spinach. Simmer until spinach is thawed. Meanwhile cook noodles. In buttered baking dish, layer noodles first, then meat sauce then sprinkle with both cheeses. Repeat. Top with tomato sauce. Bake uncovered 30 minutes at 350.
